At UOZEN we value eating naturally and locally, and we also value our living ingredients.
Niigata has a rich artisan culture and many locally grown,
caught and produced natural foods.
At our restaurant the Japanese word “Itadakimasu”
is very important to us.
The word Itdadakimasu expresses respect for all the ingredients,
labor, life, and inspiration that goes into each dish.
We get our inspiration from the artisanship, natural beauty,
and culture of Niigata, and we hope to use this inspiration
to create unique delicious food.
It is our wish that our dishes can help represent
sustainablity, the energy of life, and “Itdadakimasu”
